After more than 25 years in the kitchen —as a cook, chef and manager in restaurants and hotels— I’ve learned one essential truth:
What makes a restaurant viable and profitable is not just “what is done”, but “how it’s done”.
-The kitchen is creativity and passion.
-Service is emotion and attention.
-But the business is commerce… and as such, it’s an invisible mechanism that connects everything. And when something fails, nothing works.
That’s why I created Sistemics2: a way to understand your restaurant as a living system, where every action, every process and every relationship adds up (though, sadly, when I join a new project, it’s often in subtract mode).

It’s a new approach through coaching and consulting that integrates gastronomy, management, people and technology for one simple reason: so you can have a business that runs on its own, and a life that also works outside the restaurant.
